PH3’s Craft Brewery Tour: Ellipsis Brewing
Owners Rob McKee, Lauren Shephard, and Matthew Lee took 3 years to plan (Why? Because they wanted to put out a solid product before anything else) and another 6 months to build out the space for the brewery. And before they even opened their doors, Ellipsis Brewing won the People’s Choice Award at the 2017 Florida SMASH Beer Festival.
The brewery operates on a 10-barrel brew system with five 10-barrel fermenters and has the capacity to produce 11,000 barrels (or 22,000 full sized kegs) per year. We decided to avoid the grand opening rush so we dropped by a week later and sampled the best that this buzzing new establishment had to offer.
PH3 Top Brews
When we first walked in, we were rather impressed by the sheer size of their taproom, which was further accentuated by lots of empty space. Room for huge crowds of thirsty travelers? Or room for expansion? Maybe a bit of both. After getting our steps in for the day we sauntered up to the metal L-shaped bar to begin the serious and important work of beer tasting. Here are the PH3 picks:
FNG’s // New England Imperial IPA, 8.3% ABV
Dry hopped with Citra, El Dorado, and Simcoe hops for a light, citrusy IPA that is mighty tasty and 100% Florida.
Y Can’t IBU // American Pale Ale, 5.1% ABV
Single hopped with Mosaic hops. This is one simple, yet delicious pale ale that really delivers after that long work week.
TradePORTER // Porter, 6.3% ABV
This slightly toasted milk-style porter is perfectly smooth, with a modest roasted grain finish that goes down like a Milk Dud.
The Ellipsis Brewclusion
The team at Ellipsis Brewing are creating something truly hype-worthy. In fact, many of their craft brews are already some of the highest rated in Central Florida, according to the popular app Untappd. Though they are the rookies in Orlando and small in comparison to some of the Central Florida microbreweries out there, keep your eye on these guys. We think 2018 might just be the year of Ellipsis.
